Prefers cut means a little on the soft side of good, so likes good/soft really. Not sure on jumps as l only play flat game

As mwesty 1 said perfers cut generally means the horse prefers the ground to be on the soft side of good. So good-soft!
The jumping I tend to go into the training screen and see what the horses' ability is. It tends to range from: Very Poor - Poor - Average - Good - not sure if you get great or excellent, if you do I haven't seen it yet.
If the horse has average or less jumping it will generally stay hurdling. Unless there is a very good reason to go jumping. i.e. if the horse wants 2m, won't stay any further but can't won over 2m hurdles it will go chasing.
My chasers have good jumping, some still don't jump that well but that's what I use to decide what the horse will jump.

I've noticed on the auction screen it will list the horse as a chaser or hurdler, not sure where they get it from though
