There is probably a more efficient way to do it but...
- open finder;
- use search bar to locate Starters Orders (make sure you select "search this Mac" button instead of recents); and
- right click on starters orders; and
- select show package contents --> contents --> resources.
From there it's a bit of experimentation, but I believe you're mostly diving into the data, gfx, and sfx folders.
I've gotten the increment bars and schedules to use but other mods, such as portraits were not successful. Further tinkering led to a reinstallation of the game. I wanted those horse portraits and it still irritates me I couldn't get it to work.
I ended up having to partition my hard drive to install Windows for one of my classes and now I use it for games. Besides...OS is treated like forgotten wasteland for game developers, and it makes things difficult.
