Wondering if someone... anyone, can help me!

I just bought the game yesterday for MAC and from what i can understand, you need some kind of decryptor/encryptor to change horses/jockeys etc names because it is different to the PC version where you simply change the files in word pad or equivalent.

If someone could advise me on where to find this decryptor/encryptor or can provide me with an explanation of how to change data files you may well be my new favourite person in the world!
