Does anyone know what affect (besides what stable name appears in game) the Stables data file has? Does it influence what track certain trainers mainly go to or something?

No, because if you look at the US stables file they're all for stables in Australia

Ok... so they are just there for show... :(
Maybe in SO6 it will show a default track for trainers (for like maidens, allowance, sellers, and small stakes).
